Whoopie Cookies

When my daughter was little, she called these our "hug cookies" because they felt like a soft, safe hug you could eat. Our Whoopie Cookies start with two pillowy allergen-free chocolate cookies, gently baked until they're tender but sturdy enough to hold a thick swirl of our house vegan vanilla butter cream. 

Every bite is fluffy, not too sweet, and completely free from wheat, dairy, eggs, nuts, soy, and more. They're the kind of treat you can finally say yes to at school parties, office celebrations, or quiet evenings at home.
